To avoid pumping air into our wine, we use the gravity flow approach to bottling. It's labor-intensive for sure, but the best way to go for our high quality wines.

This is what is left after the press. It's called press cake. In some areas the press cake is fed to live stockā€”it is, after all, strictly grape skins. In Alameda we are recycling it into their organics recycling program.
